Ingredients
  

For the Fries

  • 2 large russet potatoes Choose high-starch potatoes for best results.
  • 1 tablespoon olive oil For coating the fries.
  • to taste Salt and pepper

For the Buffalo Chicken

  • 2 cups cooked chicken, shredded Can use rotisserie chicken for convenience.
  • ½ cup buffalo sauce Adjust amount based on desired heat.

For Toppings

  • 1 cup shredded cheese (cheddar or mozzarella) Feel free to experiment with different cheeses.
  • ½ cup sour cream For drizzling on top.
  • ¼ cup sliced green onions For garnish.
  • ¼ cup blue cheese crumbles Optional, for an extra flavor.

Instructions
 

Preparation

  • Preheat your oven to 425°F (220°C).
  • Wash and peel the potatoes, then cut them into thin strips to create fries.
  • Soak the potato strips in cold water for about 30 minutes to remove excess starch.
  • Drain the potatoes and pat them dry with a towel.
  • In a large bowl, toss the fries with olive oil, salt, and pepper until evenly coated.

Cooking

  • Spread the fries in a single layer on a baking sheet lined with parchment paper.
  • Bake the fries for about 30-35 minutes, flipping halfway through, until they are golden and crispy.
  • While the fries bake, mix the shredded chicken with buffalo sauce in a bowl until fully coated.
  • Once the fries are done, remove them from the oven and sprinkle the hot fries with the buffalo chicken mixture.
  • Top the fries with shredded cheese and return them to the oven for another 5-7 minutes or until the cheese melts.

Serving

  • Remove from the oven and drizzle sour cream over the top.
  • Finish by adding sliced green onions and blue cheese crumbles if desired.
  • Serve immediately and enjoy!

Notes

For extra crispy fries, consider double-frying them. You can also customize toppings based on preference.
