  • 1 lb chicken breast, cooked and shredded Use leftover or rotisserie chicken for convenience.
  • 1 can (15 oz) white beans, drained and rinsed
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 cup chicken broth
  • 1 cup cream cheese For a creamy texture.
  • 1/2 cup buffalo sauce Adjust according to spice tolerance.
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • to taste Salt and pepper
  • Chopped green onions and shredded cheese for garnish Optional toppings.

Instructions
 

Preparation

  • Heat a large pot over medium heat.
  • Add the diced onion and minced garlic, sautéing until soft for 3 to 4 minutes.
  • Incorporate the shredded chicken, then stir in the drained white beans and canned tomatoes.
  • Pour in the chicken broth and buffalo sauce; add cumin and stir well.
  • Bring to a gentle simmer, allowing flavors to meld.
  • Lower the heat and add cream cheese, stirring until fully melted and smooth.
  • Season with salt and pepper to taste before serving.

Serving

  • Ladle chili into bowls and top with shredded cheese and green onions.
  • Serve with warm, crusty bread or tortilla chips.

Notes

Adjust the spice level with more or less buffalo sauce. Can add toppings like tortilla chips for crunch.
