Ingredients
  

For the Chicken

  • 1 pound boneless, skinless chicken breasts
  • 1 cup Buffalo sauce

For the Base

  • 2 cups cooked quinoa or brown rice Cook according to package instructions.

For the Toppings

  • 2 cups shredded lettuce
  • 1 cup diced tomatoes
  • 1 cup diced cucumber
  • 1 whole avocado, sliced
  • ½ cup crumbled blue cheese or feta cheese
  • ¼ cup chopped green onions
  • to taste Olive oil
  • to taste Salt and pepper

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • Season the chicken breasts with salt and pepper. Bake the chicken in the preheated oven for 25-30 minutes, or until fully cooked.
  • Remove the chicken from the oven and let it rest for a few minutes.
  • Once cool enough to handle, shred the chicken using two forks.
  • Toss the shredded chicken in a bowl with the Buffalo sauce until well coated.
  • While the chicken cooks, prepare your base by cooking quinoa or brown rice according to package instructions.

Assembly

  • In serving bowls, layer the cooked grains.
  • Top the grains with the spicy Buffalo chicken, followed by shredded lettuce, diced tomatoes, diced cucumber, avocado slices, and crumbled cheese.
  • Garnish with chopped green onions and a drizzle of olive oil.
  • Serve immediately, or store in the refrigerator for meal prep.

Notes

For a milder flavor, consider using a different sauce or mixing in ranch dressing. If desired, marinate the chicken in Buffalo sauce for at least 30 minutes before cooking for enhanced flavor.
