Bruschetta Chicken

Ingredients
  

Bruschetta Topping

  • 1 cup tomatoes, finely cubed Use ripe, juicy tomatoes for best flavor.
  • 1 clove garlic, minced Use fresh garlic for better flavor.
  • 1 medium shallot, minced
  • 3 leaves basil, finely chopped
  • 2 tablespoons olive oil, divided One tablespoon for topping and one for cooking chicken.
  • 1/2 teaspoon salt (or to taste)
  • 1/2 teaspoon pepper (or to taste)

Chicken and Assembly

  • 2 large chicken breasts, boneless and skinless, cut in half lengthwise
  • 4 slices mozzarella cheese
  • 1/4 cup balsamic glaze

Instructions
 

Preparation of Topping

  • In a medium-sized bowl, combine the finely cubed tomatoes, minced garlic, minced shallot, and chopped basil.
  • Drizzle one tablespoon of olive oil over the mixture and season with half of the salt and pepper. Mix well and set aside.

Cooking the Chicken

  • Season the chicken breasts generously with the remaining salt and pepper on both sides.
  • Heat a tablespoon of olive oil in a large skillet over medium-high heat.
  • Add the seasoned chicken breast pieces to the skillet. Cook for approximately 3 to 4 minutes on each side until golden-brown.
  • Place a slice of mozzarella cheese atop each chicken breast, cover the skillet, and melt the cheese.

Serving

  • Plate the chicken breasts and top each piece with the prepared bruschetta mixture.
  • Drizzle balsamic glaze over the chicken before serving.

Notes

Serve with fresh arugula or green salad for added crunch. Roasted vegetables or garlic bread make excellent sides. Garnish with whole basil leaves.
