Ingredients
  

For the Brownie Base

  • 1 box (9 oz) fudge brownie mix
  • 1 large egg
  • 1 tbsp cold water

For the Caramel Layer

  • 14 oz unwrapped soft caramels
  • 1 can (5 oz) evaporated milk

For the Cheesecake Filling

  • 16 oz cream cheese, at room temperature Ensure it's at room temperature for a smooth filling.
  • ½ cup granulated sugar
  • 1 tsp pure vanilla extract
  • 2 large eggs

For Topping

  • 1 cup chocolate fudge sauce Warm before drizzling over slices.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine the brownie mix, one large egg, and one tablespoon of cold water. Stir until mixed well.
  • Grease a 9-inch springform pan and press the brownie mixture into the bottom to create an even layer.

Baking the Brownie Layer

  • Bake the brownie base in the preheated oven for about 25 minutes. The edges should be set, while the center may be soft.

Making the Caramel Layer

  • In a saucepan over low heat, place the unwrapped caramels and evaporated milk. Stir constantly until melted and smooth.
  • Pour the caramel mixture over the baked brownie base and allow it to cool for about 15 minutes.

Preparing the Cheesecake Filling

  • In a large mixing bowl, beat the cream cheese until fluffy.
  • Gradually add the sugar, vanilla extract, and two eggs, mixing until well combined and smooth.
  • Spread the cream cheese mixture evenly over the cooled caramel layer.

Baking the Cheesecake

  • Return the cheesecake to the oven and bake for an additional 40 minutes until the center barely jiggles.
  • Allow it to cool completely at room temperature, then refrigerate for at least 4 hours or overnight.

Serving

  • Slice the cheesecake using a sharp knife dipped in hot water for cleaner cuts.
  • Drizzle warm chocolate fudge sauce over each slice before serving.
