Ingredients
  

Cookie Dough

  • 2 cups all-purpose flour Spoon flour into measuring cup and level off with a knife.
  • 1.5 teaspoons baking powder
  • 0.5 teaspoon salt
  • 0.75 cup unsalted butter, softened Use room temperature butter for easier creaming.
  • 1 cup brown sugar, packed Creates a rich, buttery flavor.
  • 1 large egg
  • 1 teaspoon vanilla extract

Frosting and Decoration

  • 0.5 cup brown sugar frosting Used for filling.
  • 1 tablespoon milk Used for thinning frosting if needed.
  • to taste extra sprinkles For optional decoration.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a bowl, mix together the flour, baking powder, and salt. Set aside.
  • In a separate large bowl, cream the softened butter and brown sugar together until light and fluffy.
  • Beat in the egg and vanilla extract until fully incorporated.
  • Gradually add the dry flour mixture to the wet ingredients, mixing until just combined.
  • Divide the dough into halves, flatten each half into a disk, and wrap in plastic wrap. Chill in the refrigerator for about 30 minutes.

Baking

  • Roll out one disk of dough on a floured surface to about 1/8 inch thick. Cut into rectangles (4x3 inches), and place on the prepared baking sheet.
  • Spoon about 1 tablespoon of brown sugar frosting onto the center of each rectangle.
  • Roll out the second disk of dough and cut out the same number of rectangles. Place them over the frosted rectangles, sealing the edges with a fork.
  • Bake for 12-15 minutes or until the cookies are lightly golden.
  • Allow them to cool completely before decorating with additional frosting and sprinkles if desired.
