- 1 large egg
- 2 teaspoons vanilla extract

- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 tablespoon ground cinnamon Use fresh ground for more intense flavor.
- 1/2 cup granulated sugar (for rolling)

Preparation
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
- Beat in the egg and vanilla extract until well incorporated.
- In a separate bowl, whisk together the all-purpose flour, baking soda, salt, and ground cinnamon.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined, being careful not to overmix.
- Using a cookie scoop or tablespoon, portion out the dough and roll each piece into a ball.
- Roll each ball in the granulated sugar to coat lightly.
- Place the dough balls on the prepared baking sheet, spacing them about 2 inches apart.
- Bake in the preheated oven for 10 to 12 minutes or until the edges are lightly golden and the centers still appear soft.
- Remove the cookies from the oven and let them cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.
