Dough Ingredients

  • 1 cup whole milk Ensure it is at room temperature
  • 1/2 cup unsalted butter 1 stick
  • 1 teaspoon salt
  • 2 1/2 cups tapioca flour 10 oz
  • 2 large eggs At room temperature
  • 1 1/2 cups freshly grated Parmesan cheese Use fresh for best results

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C) and line two baking sheets with parchment paper.
  • In a medium saucepan, heat whole milk, butter, and salt over medium heat until bubbles appear around the edges. Avoid boiling.
  • Remove from heat and stir in tapioca flour until a sticky dough forms.
  • Beat the dough in a stand mixer on medium speed for 3 to 5 minutes until smooth and elastic.
  • Allow the dough to rest for 10 minutes.
  • Add eggs one at a time, mixing for 1 minute after each addition.
  • Mix in the grated Parmesan cheese until well combined.
  • Scoop out portions of dough and roll into small balls, placing them 2 inches apart on the baking sheets.

Baking

  • Bake for 15 to 20 minutes until puffed and golden brown.
  • Let them cool slightly before serving.

Notes
