Boursin Orzo with Chicken

  • 2 tablespoons olive oil
  • 4 pieces boneless, skinless chicken breasts
  • 1 teaspoon garlic powder
  • ½ teaspoon paprika
  • ½ teaspoon salt or to taste
  • ¼ teaspoon black pepper
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • ½ cup heavy cream
  • 1 package (5.2 oz) Boursin cheese (Garlic & Fine Herbs flavor)
  • 1 cup fresh spinach, chopped
  • ¼ cup grated Parmesan cheese optional
  • Fresh parsley, chopped optional, for garnish

Preparation

  • Season the chicken breasts by combining garlic powder, paprika, salt, and black pepper in a small bowl. Rub this mixture evenly over each chicken breast.
  • Heat olive oil in a large skillet over medium heat. Once hot, add seasoned chicken breasts and sear for about 4 to 5 minutes on each side until golden brown and cooked through. Remove chicken and set aside.
  • In the same skillet, add uncooked orzo and toast for 1 to 2 minutes while stirring constantly.
  • Pour in the chicken broth, bringing the mixture to a gentle simmer. Cover and cook for 8 to 10 minutes until orzo is tender and has absorbed most of the broth.
  • Lower the heat and stir in heavy cream and Boursin cheese until smoothly combined.
  • Add chopped spinach and cook for 1 to 2 minutes until it wilts.
  • Return seared chicken breasts to the skillet and let them warm through in the orzo mixture for a couple of minutes.
  • If desired, sprinkle with grated Parmesan cheese and chopped parsley before serving.

Notes

Store leftovers in an airtight container in the fridge for up to three days. Reheat gently, adding a splash of broth or cream.
