boneless skinless chicken breasts

all-purpose flour or arrowroot powder
(to coat the chicken)
Kosher salt and black pepper
(for seasoning)

avocado oil or olive oil
(for searing)

Boursin cheese
(preferably Garlic and Herb flavor)

shallots
(finely chopped, about ¼ cup)

vegetable broth
(to build the sauce)
Instructions
Pound chicken breasts to about half an inch thick for even cooking.
Season chicken with salt and pepper, then coat with flour or arrowroot powder.
Heat oil in a large pan over medium-high heat. Sear chicken for about 4 minutes on each side until golden brown and cooked through.
Remove chicken and set aside. In the same pan, add shallots and cook for about 1 minute until softened.
Deglaze the pan with vegetable broth, scraping up browned bits. Simmer for 3-4 minutes until slightly reduced.
Stir in Boursin cheese until smooth and creamy. Return chicken to the pan and simmer for 2-3 minutes, coating with sauce.
Garnish with chopped parsley before serving.
