Ingredients
  

  • pounds boneless skinless chicken breasts
  • ¼ cup all-purpose flour or arrowroot powder (to coat the chicken)
  • Kosher salt and black pepper (for seasoning)
  • tablespoons avocado oil or olive oil (for searing)
  • 5 ounces Boursin cheese (preferably Garlic and Herb flavor)
  • 2 small shallots (finely chopped, about ¼ cup)
  • 1 cup vegetable broth (to build the sauce)

Instructions
 

  • Pound chicken breasts to about half an inch thick for even cooking.
  • Season chicken with salt and pepper, then coat with flour or arrowroot powder.
  • Heat oil in a large pan over medium-high heat. Sear chicken for about 4 minutes on each side until golden brown and cooked through.
  • Remove chicken and set aside. In the same pan, add shallots and cook for about 1 minute until softened.
  • Deglaze the pan with vegetable broth, scraping up browned bits. Simmer for 3-4 minutes until slightly reduced.
  • Stir in Boursin cheese until smooth and creamy. Return chicken to the pan and simmer for 2-3 minutes, coating with sauce.
  • Garnish with chopped parsley before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently over low heat.
