  • 1 cup bell peppers, diced

  • 1 tablespoon olive oil For sautéing
  • 1/2 teaspoon black pepper

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • Cook the pasta according to the package instructions until al dente. Drain and set aside.
  • In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until soft, about 3 minutes.
  • Stir in the minced garlic and cook for another minute until fragrant.
  • Add the diced bell peppers and cherry tomatoes, cooking for an additional 5 minutes until they start to soften.
  • Incorporate the fresh spinach into the mixture and stir until wilted.
  • In a large bowl, combine the cooked pasta, sautéed vegetables, Boursin cheese, and vegetable broth. Mix well until the pasta is evenly coated.
  • Season with salt and pepper, adjusting to your taste.

Baking

  • Transfer the pasta mixture into a greased baking dish and sprinkle the grated mozzarella cheese on top.
  • Bake in the preheated oven for 20-25 minutes, or until the cheese is bubbly and golden.
  • Once done, let it cool slightly before serving.
