  • 4 large sweet potatoes Firm and heavy for their size.
  • 1/2 cup brown sugar Can be substituted with maple syrup or coconut sugar.
  • 1/4 cup unsalted butter, melted Use vegetarian butter if necessary.
  • 1/4 cup bourbon Opt for a high-quality bourbon for best flavor.
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon For a spiced version, consider adding additional spices.
  • 1/2 teaspoon ground nutmeg
  • 1/2 cup milk
  • 1 cup mini marshmallows Optional for topping.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • Peel the sweet potatoes and cut them into chunks. Boil them in a large pot of salted water for about 15-20 minutes or until fork-tender.
  • Drain the sweet potatoes and transfer them to a large mixing bowl. Mash them until smooth.
  • Add brown sugar, melted butter, bourbon, eggs, vanilla extract, salt, cinnamon, nutmeg, and milk to the mashed sweet potatoes. Mix until well combined and creamy.
  • Pour the sweet potato mixture into a greased 9x13-inch baking dish, smoothing the top with a spatula.
  • If you enjoy the gooey texture, sprinkle mini marshmallows evenly on top.

Baking

  • Bake the casserole in the preheated oven for 30-35 minutes, or until the top is golden and bubbly.
  • Remove from the oven and allow it to cool for a few minutes before serving.

Notes

For variations, try adding chopped pecans or spicing it up with ginger or allspice. If making ahead, prepare a day in advance and bake when ready to serve. Store leftovers covered in the refrigerator for up to four days or freeze for three months.
