Blueberry Greek Yogurt Bites

Ingredients
  

Main Ingredients

  • 2 cups Greek yogurt (plain or flavored) Use thicker yogurt for creamier bites.
  • 1 cup fresh blueberries Wash and pat dry before use.
  • 2 tablespoons honey or maple syrup Optional for added sweetness.
  • 1 teaspoon vanilla extract
  • a pinch salt
  • Mini paper cups (optional) Alternatively, use a silicone mold.

Instructions
 

Preparation

  • Wash the blueberries under cold water and pat them dry with a clean towel.
  • In a mixing bowl, combine the Greek yogurt, honey or maple syrup (if using), vanilla extract, and a pinch of salt. Stir until smooth and well blended.
  • Add the fresh blueberries to the yogurt mixture and gently fold them in so they are evenly distributed.
  • If using mini paper cups, place them on a baking tray. Alternatively, use a silicone mold for easier removal.
  • Spoon the yogurt and blueberry mixture into the cups or mold, filling each about three-quarters full.

Freezing

  • Place the tray in the freezer and let the bites freeze for at least 4 hours or until solid.
  • Once frozen, pop the yogurt bites out of the cups or mold and transfer them to an airtight container for storage.

Notes

For a refreshing snack, serve the bites straight from the freezer or let them sit out for a few minutes for a creamier texture. Consider adding a sprinkle of granola or additional fruits for variation.
