Ingredients
  

For the Blueberry Filling

  • 3.5 cups Fresh Blueberries Use fresh for best flavor.
  • 0.5 cup Brown Sugar For the filling.
  • 0.25 cup Fresh Lemon Juice Adds acidity.
  • 6 teaspoons Cornstarch For thickening.
  • 1 teaspoon Vanilla Extract For flavor.

For the Crust and Topping

  • 2.5 cups Large Flake Rolled Oats Gives crunch.
  • 1.25 cups All-Purpose Flour Base for crust.
  • 1 cup Brown Sugar For the crust.
  • 0.5 tablespoon Lemon Zest Adds flavor.
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Cinnamon For warmth.
  • Nutmeg A pinch for flavor.
  • 1 cup Cold Butter, cubed Important for texture.

Instructions
 

Prepare the Filling

  • Place fresh blueberries, brown sugar, and lemon juice into a medium saucepan and heat on medium-high until boiling.
  • Reduce heat and simmer for 10 minutes until blueberries are tender and juicy.

Thicken the Filling

  • Mix cornstarch with 2 tablespoons of cold water in a small bowl.
  • Add the cornstarch mixture to the blueberries, stirring constantly for 1 to 2 minutes until thickened.
  • Remove from heat, stir in vanilla extract and refrigerate until cool.

Make the Crust and Topping

  • Preheat the oven to 350°F (175°C). Line an 8-inch baking pan with parchment paper.
  • In a large bowl, combine rolled oats, remaining brown sugar, flour, cinnamon, nutmeg, and lemon zest.
  • Cut in cold butter until the mixture resembles coarse crumbs.

Assemble the Bars

  • Press half of the crumb mixture into the bottom of the prepared baking pan.
  • Spread blueberry filling over the crust, then sprinkle remaining crumb mixture on top.

Bake

  • Bake for 40 to 45 minutes until the topping is golden brown and filling is bubbling.

Cool and Serve

  • Allow to cool completely in the pan before lifting out and slicing into squares.

Notes
