  • 2 cups fresh blueberries Fresh blueberries are recommended for best flavor.
  • 1 cup cottage cheese Use smooth cottage cheese for creaminess.
  • 1/2 cup honey or maple syrup Adjust sweetness to taste.
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice Freshly squeezed is preferable.
  • 1 pinch salt Enhances flavor.

Preparation

  • Start by rinsing the blueberries thoroughly under cold water. Remove any stems or leaves.
  • In a blender or food processor, combine the blueberries, cottage cheese, honey or maple syrup, vanilla extract, lemon juice, and salt.
  • Blend the mixture until smooth and well combined. You can leave some blueberry chunks if you prefer a textured ice cream.

Freezing

  • Pour the blended mixture into an airtight container and place it in the freezer.
  • Let it freeze for about 4 hours, or until firm. Stir the mixture every hour during the freezing process for a creamier texture.

Serving

  • Once set, scoop and serve immediately, or allow it to sit at room temperature for a few minutes for easier scooping.

Notes

You can serve in bowls or cones. Top with additional fresh blueberries and mint for presentation. Consider drizzling with fruit sauce or pairing with shortcake for added texture.
