Ingredients
  

Dry Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon (optional) adds warmth and flavor

Wet Ingredients

  • 4 large ripe bananas the riper, the better
  • 1 large egg can substitute with flaxseed meal mixture or unsweetened applesauce
  • 1 teaspoon vanilla extract
  • 1/2 cup sugar
  • 1/2 cup unsalted butter (melted) 1 stick

Fruits

  • 1 cup fresh blueberries use fresh for best flavor; can substitute with other berries or chocolate chips

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a medium bowl, combine the all-purpose flour and baking soda. Stir well and set aside.
  • In a large mixing bowl, mash the ripe bananas until mostly smooth, leaving small chunks.
  • Add the egg and vanilla extract to the mashed bananas. Mix until well combined.
  • Pour in the sugar and melted butter. If using, sprinkle in the cinnamon. Mix until the sugar is mostly dissolved.
  • Gradually add the flour mixture to the banana mixture. Mix until no dry flour remains to avoid overmixing.
  • Gently fold in the fresh blueberries.
  • Spray a bread pan with cooking oil or line it with parchment paper.
  • Pour the batter into the prepared bread pan and smooth the top.

Baking

  • Bake in the preheated oven for 65-75 minutes, until the top is golden brown and a toothpick inserted into the center comes out clean.
  • Let the bread cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

Notes

Serve warm with butter or cream cheese. Can be stored in an airtight container or frozen for longer storage.
