Ingredients
  

Dry Ingredients

  • 2 cups granulated sugar
  • 2.5 cups all-purpose flour
  • 0.25 cups unsweetened cocoa powder
  • 0.5 tsp salt
  • 1 tsp baking soda

Wet Ingredients

  • 1 cup unsalted butter, softened Make sure it is softened to room temperature.
  • 3 large eggs At room temperature.
  • 1 tsp vanilla extract
  • 2 tbsp distilled white vinegar
  • 1 cup milk Room temperature.
  • as desired blue food coloring Add gradually to achieve desired shade.

Frosting

  • 16 oz cream cheese, softened
  • 1 cup unsalted butter, softened Make sure it is softened to room temperature.
  • 1 tsp vanilla extract
  • 5-6 cups powdered sugar Adjust for desired sweetness and consistency.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and line a cupcake pan with paper liners.
  • Cream together the softened butter and granulated sugar using a stand mixer until light and fluffy (3-5 minutes).
  • Add the eggs one at a time, mixing well after each addition.
  • Stir in the vanilla extract and distilled white vinegar until combined.
  • Gently incorporate the dry ingredients: cocoa powder, flour, salt, and baking soda.
  • Pour in the milk and mix until smooth, being careful to avoid lumps.
  • Add blue food coloring until the desired shade is achieved.
  • Divide the batter into the prepared cupcake liners, filling each about two-thirds full.

Baking

  • Bake for about 25-30 minutes, checking with a toothpick inserted into the center.
  • Allow cooling completely on a wire rack before frosting.

Frosting

  • In a large bowl, beat together the cream cheese and softened butter until combined.
  • Gradually add powdered sugar, mixing until smooth and creamy.
  • Add a splash of vanilla extract to enhance the flavor.
  • Frost the cooled cupcakes generously with cream cheese frosting.

Notes
