Ingredients
  

For the Cupcakes:

  • 1 large egg
  • 1 cup 200g granulated sugar
  • ½ cup 113g unsalted butter, softened
  • A small drop of Wilton Violet gel food coloring
  • 1 tbsp cocoa powder
  • 1 ¼ cups 144g cake flour, sifted
  • ½ tbsp Wilton Royal Blue gel food coloring
  • ½ tsp salt
  • ½ cup buttermilk
  • ½ tsp white vinegar
  • 1 tsp pure vanilla extract
  • ½ tsp baking soda

For the Cream Cheese Frosting:

  • 125 g unsalted butter softened
  • 250 g cream cheese softened
  • 4 cups powdered sugar sifted
  • 1 tsp pure vanilla extract

Instructions
 

Step 1: Gather Your Tools and Ingredients

  • Preheat your oven to 175°C (or 155°C for a fan oven) and line a muffin tin with cupcake liners. Make sure all your ingredients are at room temperature.

Step 2: Cream Butter and Sugar

  • In a large bowl, cream softened butter and sugar together until pale and fluffy, about 2-3 minutes.

Step 3: Add Wet Ingredients

  • Beat in the egg until fully combined. Mix cocoa powder with blue and violet gel food coloring to make a paste, then add it to the batter. Stir until the color is even.

Step 4: Alternate Dry and Wet Ingredients

  • Sift together cake flour and salt. Gradually add the dry ingredients to the batter, alternating with buttermilk. Start and finish with the dry ingredients.

Step 5: Activate and Add Baking Soda

  • Mix baking soda with vinegar in a small bowl—watch for bubbles! Fold this into the batter carefully.

Step 6: Bake to Perfection

  • Fill cupcake liners two-thirds full with batter and bake for 25–30 minutes. Use a toothpick to check for doneness (it should come out clean). Let cupcakes cool on a wire rack.

Step 7: Prepare the Cream Cheese Frosting

  • Beat softened cream cheese and butter until smooth. Add vanilla extract, then gradually sift in powdered sugar until fluffy.

Step 8: Decorate the Cupcakes

  • Frost cooled cupcakes using a piping bag and decorate as desired with edible glitter or other toppings.
