Ingredients
  

For the spice mix

  • 1 teaspoon kosher salt
  • 2 teaspoons smoked paprika
  • 2 teaspoons garlic powder
  • 1 teaspoon dried thyme leaves
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon cayenne pepper adjust based on your spice preference

For the chicken

  • 2 pieces boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 2 tablespoons unsalted butter

Preparation

  • In a small bowl, combine kosher salt, smoked paprika, garlic powder, dried thyme, onion powder, and cayenne pepper to make a spice mix.
  • Slice each chicken breast in half lengthwise and pound them to an even thickness if necessary. Pat them dry with a paper towel.
  • Sprinkle the spice mix generously over both sides of the chicken breasts and rub it in for even coating.

Cooking

  • Heat a skillet over medium-high heat. Add equal parts olive oil and butter to the skillet.
  • Once hot, carefully add the seasoned chicken breasts to the skillet and cook for about 3-4 minutes until golden brown.
  • Flip the chicken, add the remaining butter, and cook for an additional 2-3 minutes until the internal temperature reaches 163-165°F (72-73°C).
  • Remove the chicken from the skillet and cover loosely with foil. Allow it to rest for at least 5 minutes.

Notes

Serve blackened chicken with roasted vegetables, in a wrap, or topped with sauce. Adjust spices based on your preferences and consider fresh herbs for garnish.
