Ingredients
  

For the crust

  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, melted
  • 1/4 cup granulated sugar
  • 1/2 teaspoon salt

For the filling

  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup fresh blackberries Ripe, fresh preferred
  • 1/2 cup chopped pistachios Coarsely chopped for crunch
  • 2 tablespoons all-purpose flour Used in filling

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and line an 8x8-inch baking pan with parchment paper, leaving some overhang for easy removal.
  • In a mixing bowl, combine 1 cup of flour, melted butter, 1/4 cup of granulated sugar, and salt. Mix until crumbly and well combined.
  • Press the mixture evenly into the bottom of the prepared baking pan to form the crust. Bake for 15 minutes until lightly golden.

Filling

  • While the crust bakes, prepare the filling. In a separate bowl, whisk together 1 cup of granulated sugar, eggs, vanilla extract, and 2 tablespoons of flour until smooth.
  • Gently fold in the fresh blackberries and chopped pistachios into the filling mixture.
  • Pour the filling over the baked crust, spreading it evenly.
  • Return the pan to the oven and bake for an additional 20-25 minutes, or until the filling is set and slightly golden on top.

Finishing Up

  • Allow the bars to cool completely in the pan before carefully lifting them out using the parchment overhang.
  • Cut into squares and enjoy!

Notes

Serve bars plain or with a dollop of whipped cream or a scoop of vanilla ice cream. Store in an airtight container at room temperature for up to three days or refrigerate for up to a week. Freezing is also an option for longer storage.
