Ingredients

cold unsalted butter

Instructions
In a small bowl, whisk together egg, vanilla extract, almond extract, and salt. Set aside.
In another bowl, combine flour, baking soda, and baking powder. Set aside.
In a food processor, pulse cold butter and granulated sugar until fluffy.
Add the egg mixture and blend until combined. Then add the flour mixture and process until dough forms.
Divide dough, roll into balls, and flatten between parchment. Chill in the fridge for about 1.5 hours.
Preheat oven to 300°F (150°C). Cut out cookies using a cat-shaped cookie cutter.
Place cookies on a baking sheet and chill for another 30 minutes.
Bake for 14-18 minutes until bottoms are slightly brown. Cool on a wire rack.
In a mixing bowl, combine icing sugar, meringue powder, and warm water until soft peaks form.
Use black icing to decorate cookies, adding green sugar pearls as eyes.
