Ingredients
  

  • 1 egg
  • 1 tsp. vanilla extract
  • 1/4 tsp. almond extract optional
  • 3/4 tsp. salt
  • 2 1/2 cups all-purpose flour or gluten-free flour
  • 1 cup granulated sugar
  • 1 cup cold unsalted butter 2 sticks
  • 4 cups icing sugar about 1 pound
  • 3 Tbsp. meringue powder
  • 1/2 cup warm water
  • 4-8 tsp. cocoa powder
  • black gel food coloring
  • green sugar pearls optional

Instructions
 

  • In a small bowl, whisk together egg, vanilla extract, almond extract, and salt. Set aside.
  • In another bowl, combine flour, baking soda, and baking powder. Set aside.
  • In a food processor, pulse cold butter and granulated sugar until fluffy.
  • Add the egg mixture and blend until combined. Then add the flour mixture and process until dough forms.
  • Divide dough, roll into balls, and flatten between parchment. Chill in the fridge for about 1.5 hours.
  • Preheat oven to 300°F (150°C). Cut out cookies using a cat-shaped cookie cutter.
  • Place cookies on a baking sheet and chill for another 30 minutes.
  • Bake for 14-18 minutes until bottoms are slightly brown. Cool on a wire rack.
  • In a mixing bowl, combine icing sugar, meringue powder, and warm water until soft peaks form.
  • Use black icing to decorate cookies, adding green sugar pearls as eyes.
