  • 2 cans (15 oz each) black beans, bean liquid reserved from one can
  • 2 tablespoons olive oil for sautéing
  • ½ cup onions, diced
  • 4 cloves garlic, diced
  • 7 oz corn
  • 1 cup green bell pepper, diced
  • 14 oz diced tomatoes with liquid
  • 1 cup tomato sauce

Spices

  • 2 teaspoons chili powder adjust for spiciness
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • ¼ teaspoon cinnamon
  • ½ teaspoon oregano
  • to taste Salt and pepper

Instructions
 

Preparation

  • Gather all your ingredients and ensure they are prepped as noted in the ingredient list.

Cooking

  • Heat two tablespoons of olive oil in a large pot over medium heat.
  • Add the diced onions, garlic, and green bell pepper. Sauté for about four minutes until the onions turn translucent and the bell pepper begins to soften.
  • Add the spices: chili powder, smoked paprika, cumin, cinnamon, oregano, salt, and pepper. Stir and allow the spices to become fragrant for a minute.
  • Pour in the tomato sauce and diced tomatoes with their liquid. Stir well to combine.
  • Incorporate the corn and add the black beans along with the reserved liquid from one can.
  • Allow the chili to simmer on low heat for about ten minutes, stirring occasionally.
  • Remove from heat and serve hot.

Notes

For garnishes, consider using chopped cilantro, slices of avocado, or a dollop of sour cream. Serve with cornbread or over rice for a complete meal. Tortilla chips can add crunch to the dish.
