  • 250 g Biscoff cookies
  • 500 g Mascarpone cheese
  • 300 ml Heavy cream Make sure it's cold before whipping.
  • 100 g Powdered sugar
  • 1 tsp Vanilla extract
  • 200 ml Coffee or coffee alternative (cooled) Let cool to room temperature before use.
  • Cocoa powder Cocoa powder (for dusting) Dust before serving.

Preparation

  • Prepare your coffee or coffee alternative and let it cool to room temperature.
  • In a large bowl, add the mascarpone cheese, powdered sugar, and vanilla extract. Mix with a hand mixer until smooth and creamy.
  • In another bowl, beat the heavy cream until it forms stiff peaks, about 3-5 minutes on medium speed.
  • Gently fold the whipped cream into the mascarpone mixture in three batches, being careful not to deflate the cream.
  • Quickly dip each Biscoff cookie into the cooled coffee, soaking for just a second on each side.
  • Layer the soaked cookies in the bottom of a rectangular dish.
  • Spread half of the mascarpone mixture over the cookies, smoothing it evenly.
  • Repeat the process with another layer of soaked cookies followed by the remaining mascarpone mixture.
  • Cover the dish with plastic wrap and refrigerate for at least 4 hours, or overnight for the best results.
  • Dust the top with cocoa powder before serving.

Notes

For best flavor, allow the tiramisu to chill overnight. Store in an airtight container in the refrigerator for up to four days. Consider garnishing with cocoa powder or Biscoff cookie crumbs before serving.
