Ingredients
  

Main Ingredients

  • 2 lbs beef (chuck roast or short ribs) Use cuts with rich marbling for tenderness.
  • 4 cups beef broth High-quality broth enhances the final flavor.
  • 2 medium tomatoes (fresh)
  • 3-4 pieces dried chiles (such as guajillo or ancho) Adjust quantity based on desired spice level.
  • 1 medium onion
  • 4 cloves garlic (minced)
  • 1 tsp cumin
  • 1 tsp oregano
  • to taste salt and pepper
  • as needed tortillas (for serving) Warm before serving.
  • as needed chopped cilantro and onions (for garnish) Adds freshness to the dish.

Instructions
 

Preparation

  • Heat a pan over medium heat and toast the dried chiles until fragrant.
  • Soak the chiles in warm water for about 10-15 minutes.
  • Blend the softened chiles, peeled fresh tomatoes, chopped onion, minced garlic, cumin, and oregano until smooth. Add a little soaking water for a perfect sauce consistency.

Cooking

  • In an Instant Pot or slow cooker, place the beef and pour the blended sauce over it. Add the beef broth and season generously with salt and pepper.
  • If using the Instant Pot, cook on high pressure for 45 minutes. For a slow cooker, set it on low for 6-8 hours.
  • Once cooked, shred the beef into bite-sized pieces using two forks.

Serving

  • Serve the Birria as a stew or in warm tortillas with chopped cilantro and diced onions. Include lime wedges for an extra zing.

Notes

Let the Birria rest for a few minutes after cooking to meld flavors. This dish tastes even better the next day, making it ideal for meal prep. Store leftovers in an airtight container.
