Main Ingredients

  • 1 pound ground chicken or turkey Opt for lean meat to keep it light.
  • 1 can (15 ounces) white kidney beans, drained and rinsed You can also use navy beans or cannellini beans.
  • 1 can (4 ounces) chopped green chilies Adjust heat to preference.
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 teaspoon ground cumin
  • 1 teaspoon oregano
  • to taste Salt and pepper

  • to taste shredded cheese
  • to taste cilantro

Instructions
 

Cooking the Chili

  • In a large pot, place the ground chicken or turkey over medium heat. Cook thoroughly, breaking it apart with a spoon, until browned and fully cooked (5 to 7 minutes).
  • Add the chopped onion and minced garlic to the pot, and cook for an additional 3 to 5 minutes, until the onion is translucent and fragrant.
  • Stir in the chopped green chilies, drained white kidney beans, and chicken broth.
  • Add the ground cumin and oregano, and stir to combine all ingredients thoroughly.
  • Bring the mixture to a boil, then reduce heat to low and let it simmer for about 20 minutes.
  • After 20 minutes, taste and season with salt and pepper as desired.
  • Ladle the hot chili into bowls and top with your choice of sour cream, shredded cheese, or cilantro.

Notes

You can customize the chili with additional toppings or ingredients like corn, diced tomatoes, or avocado. Best White Chili can be made ahead of time and stored in an airtight container. It stays good for 3-4 days in the refrigerator or can be frozen for 2-3 months.
