  • 4 pieces boneless, skinless chicken breasts
  • 1 cup roasted red peppers, sliced
  • 1 cup grated Parmesan cheese
  • 1 cup heavy cream
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley for garnish Optional

Preparation

  • Preheat your oven to 400°F (200°C).
  • In a large oven-safe skillet, heat olive oil over medium heat.
  • Season the chicken breasts with salt, pepper, oregano, and basil.
  • Add the chicken breasts to the skillet and sear for about 5-7 minutes on each side until golden brown.
  • Remove the chicken from the skillet and set it aside on a plate.
  • In the same skillet, add minced garlic and sauté for about 1 minute until fragrant.
  • Pour in the heavy cream and stir to combine, scraping any browned bits from the bottom of the skillet.
  • Add the roasted red peppers and half of the Parmesan cheese to the cream mixture, stirring well.
  • Return the chicken to the skillet, spooning some of the sauce over each piece.
  • Sprinkle the remaining Parmesan cheese on top of the chicken.
  • Place the skillet in the preheated oven and bake for about 25-30 minutes until the chicken is cooked through and the cheese is golden.
  • Remove from the oven and let it rest for a few minutes before garnishing with fresh parsley.
