Ingredients

  • 2 teaspoons Ground cinnamon

  • 1 cup Unsalted butter Room temperature
  • 1 cup Granulated sugar
  • 1 cup Brown sugar
  • 4 large Eggs
  • 1 cup Milk Whole
  • 2 teaspoons Vanilla extract
  • 1 zest Zest of one orange For added flavor

Add-ins

  • 2 cups Dried mixed fruits Chopped
  • 1 cup Chopped nuts Your choice

Preparation

  • Gather all your ingredients and tools including a large mixing bowl, measuring cups, spoons, a whisk, an electric mixer, and a cake pan.
  • Preheat your oven to 350°F (175°C) to ensure even baking.
  • Grease and flour a 10-inch round cake pan or line it with parchment paper.

Mixing

  • In a medium bowl, combine the all-purpose flour, baking powder, baking soda, cinnamon, and nutmeg. Whisk together to mix evenly.
  • In a large bowl, cream together the softened butter, granulated sugar, and brown sugar using an electric mixer until the mixture is light and fluffy.
  • Beat in the eggs one at a time, ensuring each egg is thoroughly combined before adding the next.
  • Gradually add the flour mixture to the wet mixture, alternating with the milk. Start and end with the flour mixture, mixing until just combined.
  • Stir in the vanilla extract, orange zest, dried mixed fruits, and chopped nuts for extra flavor.

Baking

  • Pour the batter into the prepared cake pan and smooth the top with a spatula.
  • Bake in the preheated oven for 45-55 minutes or until a toothpick inserted in the center comes out clean.

Cooling and Serving

  • Once baked, allow the cake to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
  • Optionally, dust with powdered sugar or frost with cream cheese frosting or a simple glaze before serving.
