Instructions
 

Preparation

  • Start by preparing the beef. Cut it into thin strips, about 1 inch in width and let it reach room temperature.

Cooking

  • Heat olive oil in a large skillet over medium-high heat. Add sliced beef in batches and sear until browned, about 2-3 minutes. Remove and set aside.
  • In the same skillet, add sliced onions and sauté until soft and translucent, about 3-4 minutes. Add minced garlic and cook for an additional minute.
  • Add sliced mushrooms to the skillet and cook until browned, about 5-7 minutes.
  • Stir in Dijon mustard, then gradually add beef broth and Worcestershire sauce, bringing to a simmer.
  • If desired, sprinkle in flour for a thicker sauce and stir well.
  • Lower heat, return seared beef to the skillet, and let it simmer for another 5 minutes.
  • Remove from heat, fold in sour cream until well incorporated.
  • Season with salt and pepper to taste.

Serving

  • Serve hot over egg noodles or rice, garnished with fresh parsley.

Notes

For a richer flavor, you can add a splash of cream before serving. Store leftovers in an airtight container for up to three days or freeze for up to three months.
