Ingredients
  

  • 4 large Flour tortillas
  • 1 lb Ground beef
  • 1.5 cups Shredded cheese
  • 1 medium Onion finely chopped
  • 1 Bell pepper diced (optional)
  • 2 cloves Garlic minced
  • 1 packet Taco seasoning
  • 2 tbsp Olive oil
  • to taste Salt
  • to taste Pepper

Instructions
 

  • In a skillet over medium heat, cook the ground beef, breaking it apart as it cooks, until browned.
  • Add the chopped onion, bell pepper (if using), and garlic. Cook for 3-4 minutes until softened.
  • Stir in the taco seasoning and season with salt and pepper to taste. Add a splash of water if needed, and let simmer for 2-3 minutes.
  • Heat a non-stick skillet or griddle over medium heat and add olive oil. Place one tortilla in the skillet and sprinkle with cheese.
  • Spread the beef mixture on top of the cheese, followed by another layer of cheese. Top with a second tortilla and press gently to seal.
  • Cook the quesadilla for 3-4 minutes on each side until golden brown and crispy, then flip carefully with a spatula.
  • Remove from the skillet and let rest for 1 minute before slicing into wedges.
