Instructions
In a skillet over medium heat, cook the ground beef, breaking it apart as it cooks, until browned.
Add the chopped onion, bell pepper (if using), and garlic. Cook for 3-4 minutes until softened.
Stir in the taco seasoning and season with salt and pepper to taste. Add a splash of water if needed, and let simmer for 2-3 minutes.
Heat a non-stick skillet or griddle over medium heat and add olive oil. Place one tortilla in the skillet and sprinkle with cheese.
Spread the beef mixture on top of the cheese, followed by another layer of cheese. Top with a second tortilla and press gently to seal.
Cook the quesadilla for 3-4 minutes on each side until golden brown and crispy, then flip carefully with a spatula.
Remove from the skillet and let rest for 1 minute before slicing into wedges.
