  • 2 pieces carrots, sliced Adds sweetness.
  • 2 pieces potatoes, diced Can be substituted with other veggies.
  • 1 piece bell pepper, chopped Choose your favorite color.
  • 14.5 oz can diced tomatoes Provides acidity and moisture.
  • 3 cups beef broth Choose low-sodium if preferred.
  • 2 tablespoons paprika Adds color and flavor.
  • 1 teaspoon cumin Enhances the earthy flavor.
  • to taste salt and pepper Season at the end of cooking.
  • as needed cooked rice or bread For serving.

Instructions
 

Preparation

  • Heat the olive oil in a large pot over medium heat.
  • Add the chopped onion and minced garlic; sauté until translucent and fragrant, about 3-5 minutes.
  • Add the beef chunks, season with salt and pepper, and brown on all sides.
  • Introduce the sliced carrots, diced potatoes, and chopped bell pepper, and stir for another 5 minutes.
  • Add the diced tomatoes, beef broth, paprika, and cumin, stir until well combined.
  • Bring to a gentle simmer, then cover and reduce the heat to low.
  • Cook for 1.5 to 2 hours, or until the beef is fork-tender.
  • Adjust seasoning before serving, adding more salt or pepper if needed.
  • Serve hot, over cooked rice or with bread.

Notes

Store leftovers in an airtight container in the fridge for up to 3-4 days, or freeze for 2-3 months. Reheat gently on the stove, adding a splash of broth if necessary.
