Instructions
Make sure your rice is cold and separated. Thinly slice the beef against the grain. Dice veggies, beat eggs, and have sauces measured.
Heat half the oil in a wok or large skillet over high heat. Add beef and cook quickly until just browned. Remove and set aside.
Add a bit more oil to the pan. Pour in the beaten eggs and stir until softly set. Push to one side or remove from the pan.
Add garlic and the white parts of scallions. Stir in carrots and peas. Cook until just tender.
Break apart any clumps of rice and stir-fry until warmed through.
Return beef and eggs to the pan. Add soy sauce, oyster sauce, and sesame oil. Mix well and adjust salt or pepper.
Toss in green scallion tops. Serve hot, garnished with extra scallions or a fried egg on top.
Notes
Feel free to swap out vegetables based on what you have at home. This recipe is highly customizable!
