Ingredients
  

  • 1 lb Flank Steak or Skirt Steak sliced thinly against the grain
  • 2 each Bell Peppers (Red, Yellow, Green) sliced thinly
  • 1 each Large Onion sliced thinly
  • 2 tbsp Fajita Seasoning or homemade with chili powder, cumin, garlic powder, and paprika
  • 2 tbsp Olive Oil for sautéing
  • 1 each Lime juiced
  • 8 small Flour or Corn Tortillas

Instructions
 

  • Slice the beef thinly against the grain. Mix the beef with 1 tablespoon of fajita seasoning and the juice of one lime. Drizzle with 1 tablespoon of olive oil, toss to coat evenly, and let the beef marinate for at least 20 minutes.
  • While the beef marinates, slice the bell peppers and onion into thin strips.
  • In a large pan, heat 1 tablespoon of olive oil over medium-high heat. Add the bell peppers and onions. Sauté for 5-7 minutes, until tender and slightly charred. Remove from pan and set aside.
  • In the same pan, add the marinated beef. Cook for 3-5 minutes over high heat, turning occasionally, until browned on all sides.
  • Once the beef is cooked, add the sautéed peppers and onions back into the pan. Toss everything together for 1-2 minutes until well combined and heated through.
  • Warm the tortillas in a dry skillet or microwave. Serve the beef and vegetable mixture in tortillas, and top with your choice of sour cream, guacamole, salsa, and cilantro.

Notes

Feel free to swap any of the toppings in the ingredient list with whatever you have lying around. It will probably taste just as amazing!
