Beef Enchiladas with Red Sauce

Ingredients
  

For the beef filling

  • 1 pound ground beef Use fresh ground beef for best flavor.
  • 1 small onion, finely chopped Fresh onions elevate the taste.
  • 2 cloves garlic, minced Freshly minced garlic adds depth.
  • 2 teaspoons chili powder Adjust based on spice preference.
  • 1 teaspoon cumin
  • 1 can (15 oz) crushed tomatoes Provides moisture and flavor.
  • 1 can (8 oz) tomato sauce
  • 1 can (4 oz) diced green chilies

For assembly and topping

  • 8-10 pieces corn tortillas Warm until pliable before filling.
  • 2 cups shredded cheese (cheddar or Mexican blend) Consider using pepper jack for added heat.

Instructions
 

Preparation

  • In a skillet over medium heat, cook the ground beef until browned. Add the chopped onion and minced garlic, stirring occasionally until the onion softens.
  • Mix in the chili powder and cumin, then pour in the crushed tomatoes, tomato sauce, and diced green chilies. Season with salt and pepper. Let the mixture simmer for 10 minutes.
  • Preheat your oven to 350°F (175°C).
  • While the sauce simmers, warm the corn tortillas in a separate skillet or microwave until they are pliable.

Assembly

  • Take a tortilla and spoon a portion of the beef mixture onto the center. Sprinkle some shredded cheese on top. Roll the tortilla tightly, then place it seam-side down in a baking dish. Repeat this process for the remaining tortillas.
  • Once you’ve filled the baking dish, pour any remaining beef mixture over the top of the rolled enchiladas. Sprinkle the rest of the shredded cheese on top.

Cooking

  • Bake for 20 minutes, or until the cheese is melted and bubbly.
  • Remove from the oven and let cool for a few minutes before serving. Garnish with fresh cilantro if desired.

Notes

For extra flavor in the filling, consider adding black beans, corn, or diced bell peppers. Preparing the filling a day in advance enhances the flavors.
