Ingredients
  

For the Beef Mixture

  • 500 g beef mince Use high-quality meat for best flavor.
  • 2 tsp ground cumin
  • 0.5 tsp onion powder
  • 0.5 tsp garlic powder
  • 0.5 tsp ground chili powder
  • 0.25 tsp paprika
  • 0.125 tsp cayenne pepper Adjust for more heat if desired.
  • 1 tbsp oil For cooking the beef.
  • 1/3 cup water To help simmer the beef.
  • Salt & pepper to taste

For the Salsa

  • 1 tomato, diced
  • 1 x 130 g tinned corn kernels, drained
  • 1/8 red onion, diced

For the Guacamole and Assembly

  • 1 avocado Ripe for best flavor.
  • 0.5 lime, juiced
  • 2 cups cooked white rice Alternative: brown or cauliflower rice.
  • Sour cream for topping Optional.
  • Grated cheese for topping Optional.

Preparation

  • Combine ground cumin, onion powder, garlic powder, chili powder, paprika, and cayenne pepper in a small bowl. Set aside.

Cooking the Beef

  • Heat oil in a large frying pan over medium heat.
  • Add beef mince to the pan, breaking apart any large chunks, and cook until browned (about 5-7 minutes).
  • Add the spice mix and 1/3 cup of water. Stir and let simmer for 5-10 minutes until liquid reduces. Season with salt and pepper to taste.

Preparing Salsa and Guacamole

  • In a separate bowl, mix diced tomato, drained corn, and diced red onion to make the salsa.
  • Halve the avocado, remove the pit, mash the flesh, and mix with lime juice, salt, and pepper for the guacamole.

Assembly

  • Divide cooked rice among four bowls.
  • Top each bowl with a scoop of beef, followed by salsa and guacamole.
  • Finish with a dollop of sour cream and a sprinkle of grated cheese.

Serving

  • Serve warm and enjoy!

Notes

Use fresh produce for the best taste. Store leftovers in airtight containers and consume within 3-4 days. Freeze meat and rice separately for longer storage.
