Beef and Broccoli Ramen Stir Fry

Ingredients
  

For the Sauce

  • 1/2 cup lower sodium beef broth
  • 1/4 cup reduced-sodium soy sauce
  • 2 tablespoons honey
  • 1 tablespoon cornstarch
  • 1 tablespoon rice vinegar
  • 2 teaspoons grated fresh ginger
  • 2 cloves garlic, minced
  • 2 teaspoons toasted sesame oil
  • 1/4 teaspoon crushed red pepper

For the Stir Fry

  • 6 cups water
  • 2 packages instant ramen noodles (3 ounces each) Any flavor
  • 3 cups broccoli florets (8 ounces)
  • 1 tablespoon vegetable oil
  • 1 pound beef sirloin steak, thinly sliced in bite-sized strips
  • 1/4 teaspoon salt
  • 2 green onions chopped (1/4 cup)
  • 2 teaspoons sesame seeds, toasted

Instructions
 

Preparation

  • Gather all ingredients and set aside.
  • In a small bowl, whisk together beef broth, soy sauce, honey, cornstarch, rice vinegar, grated ginger, minced garlic, sesame oil, and crushed red pepper to form the sauce.
  • Fill a large saucepan with water and bring to a boil.
  • Break ramen noodles into four pieces and add them along with the broccoli once the water is boiling. Do not add the seasoning packets.
  • Cover and cook for about 3 minutes, stirring occasionally. Drain and set aside.

Cooking the Beef

  • Heat vegetable oil in a skillet over medium-high heat.
  • Season the beef with salt, then add to the skillet and stir-fry for about 2 minutes until browned. Remove the beef and set aside.

Combining Ingredients

  • Pour the sauce mixture into the same skillet and cook while stirring for about 2 minutes until thickened.
  • Add back the cooked beef, drained ramen, and broccoli, tossing everything together until well combined. Cook for an additional minute until heated through.
  • Garnish with chopped green onions and toasted sesame seeds before serving.

Notes

For a lighter option, replace beef with chicken or tofu. Add extra vegetables like bell peppers or snow peas for variation. Store leftovers in an airtight container for up to 3 days.
