  • 1 pound boneless, skinless chicken breast, cut into bite-sized pieces
  • 2 medium sweet potatoes, peeled and diced Choose firm sweet potatoes for best texture.
  • 1 medium bell pepper, chopped
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 cup barbecue sauce
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 cup corn kernels (fresh, frozen, or canned)
  • Fresh cilantro, for garnish (optional)

Cooking

  • Heat the olive oil in a large skillet over medium heat.
  • Add the chopped onion and bell pepper. Sauté until the vegetables soften, about five minutes.
  • Stir in the minced garlic and cook for an additional minute until fragrant.
  • Add the diced sweet potatoes, smoked paprika, salt, and black pepper. Stir well to combine.
  • Cover the skillet and let everything cook for about 10 minutes, stirring occasionally until the sweet potatoes begin to soften.
  • Push the vegetables to the side of the skillet and add the chicken pieces. Cook until the chicken is no longer pink, around 5-7 minutes.
  • Once the chicken is cooked through, mix it with the vegetables.
  • Pour the barbecue sauce and corn into the skillet. Stir everything together until well coated.
  • Cover and cook for an additional 5 minutes to heat everything through.
  • Remove from heat and garnish with fresh cilantro if desired. Serve warm.

Notes

For a spicy kick, add diced jalapeños or a sprinkle of red pepper flakes while cooking. Customize veggies based on availability.
