  • 2 cups cooked pasta (rotini or penne) Cook according to package instructions
  • 2 cups grilled chicken, shredded Use leftover grilled chicken for convenience
  • 1 cup barbecue sauce Feel free to use your favorite brand
  • 1/2 cup ranch dressing
  • 1 cup cherry tomatoes, halved For freshness and color
  • 1 cup cooked corn
  • 1/2 cup red onion, diced Adds crunch and flavor
  • 1 cup shredded cheese (cheddar or mozzarella)
  • to taste salt and pepper Season to enhance flavors

Instructions
 

Preparation

  • Cook the pasta according to the package instructions until al dente, then drain and rinse with cold water to stop the cooking process.
  • In a large bowl, mix the cooked pasta with the shredded grilled chicken, adding in the barbecue sauce and ranch dressing. Stir well until everything is coated.
  • Fold in cherry tomatoes, cooked corn, diced red onion, and shredded cheese, mixing gently to combine.
  • Season with salt and pepper to taste.
  • Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow flavors to meld.
  • Before serving, give it a quick stir and garnish with freshly chopped cilantro or parsley.
