  • 1 lb boneless, skinless chicken breast or thighs
  • 1 cup barbecue sauce
  • 4 pieces flatbreads or naan
  • 1 cup shredded mozzarella cheese
  • 1/2 cup red onion, thinly sliced
  • 1/2 cup corn, cooked and drained
  • 1/4 cup fresh cilantro, chopped
  • 1/2 cup green bell pepper, thinly sliced
  • Salt and pepper to taste
  • Olive oil for brushing

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • Season the chicken with salt and pepper. In a skillet over medium heat, add a bit of olive oil, then cook the chicken for about 6-7 minutes per side, or until fully cooked. Remove from heat and let it rest for a few minutes.
  • Shred the chicken using two forks, then mix it with half of the barbecue sauce in a bowl.

Assembly

  • Place the flatbreads on a baking sheet. Brush them lightly with olive oil.
  • Spread the remaining barbecue sauce evenly over each flatbread.
  • Top with the shredded chicken, mozzarella cheese, sliced red onion, corn, and green bell pepper.

Cooking

  • Bake in the preheated oven for about 10-15 minutes, or until the cheese is bubbly and golden brown.
  • Once out of the oven, sprinkle fresh chopped cilantro on top.
  • Slice into servings, and enjoy!

Notes

For a casual get-together, cut the flatbread into smaller pieces and arrange them on a platter as finger food. Pair it with a side of creamy ranch or cool tzatziki sauce for dipping to enhance the flavors further.
