Ingredients
  

For the Chicken

  • 2 pieces boneless, skinless chicken breasts
  • 1 cup BBQ sauce Choose your favorite flavor

For the Coleslaw

  • 2 cups coleslaw mix
  • 1/2 cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey
  • to taste Salt and pepper

For Assembling

  • 4 large flour tortillas Alternatives can be used.
  • 1/4 cup sliced green onions
  • 1/4 cup chopped fresh cilantro Optional

Instructions
 

Preparation

  • Preheat the grill or grill pan over medium-high heat.
  • Brush both sides of the chicken breasts generously with BBQ sauce.
  • Grill the chicken for 6-8 minutes on each side until the internal temperature reaches 165°F (75°C).
  • While the chicken is grilling, combine the coleslaw mix, mayonnaise, apple cider vinegar, honey, salt, and pepper in a large bowl. Toss until evenly coated.
  • Once grilled, remove the chicken and let it rest for a few minutes before slicing it into thin strips.
  • Warm the tortillas on the grill for a few seconds or in the microwave for about 10-15 seconds.

Assembly

  • Lay a tortilla flat, add BBQ chicken strips, spoon the coleslaw mixture on top, and sprinkle with green onions and cilantro.
  • Carefully roll the tortilla, folding in the sides as you go.

Serving

  • Serve immediately or wrap in parchment and refrigerate until ready to serve.

Notes
