  • 3 cups cooked jasmine rice (preferably day-old) Day-old rice is recommended for better texture.
  • 1 cup mixed vegetables (carrots, peas, bell peppers) Use any combination of your favorite vegetables.
  • 1 cup cooked chicken, shrimp, or tofu (cubed) Choose your preferred protein.
  • 2 tablespoons vegetable oil
  • 2 tablespoons green onions, chopped For garnish and flavor.
  • 3 cloves garlic, minced
  • 1 teaspoon ginger, grated Fresh ginger enhances flavor.

Sauce Ingredients

  • 3 tablespoons soy sauce Adjust for saltiness.
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon sriracha Adjust according to spice preference.
  • 1 tablespoon sesame oil
  • to taste salt and pepper For seasoning.
  • fresh cilantro for garnish Optional but recommended.

Instructions
 

Preparation

  • Heat the vegetable oil in a large skillet or wok over medium-high heat.
  • Add the minced garlic and grated ginger, stirring for about 30 seconds until fragrant.
  • Toss in the mixed vegetables and sauté for 2-3 minutes until tender and vibrant.
  • If using cooked chicken, shrimp, or tofu, add it to the skillet and stir everything together, heating for an additional 2 minutes.
  • Pour in the cooked jasmine rice, breaking up any clumps with a spatula. Stir-fry for about 5 minutes until the rice is heated through.

Adding Sauce

  • In a small bowl, mix together the soy sauce, sweet chili sauce, sriracha, and sesame oil. Pour this sauce over the fried rice, stirring to coat evenly.
  • Taste the rice and adjust seasoning with salt and pepper as needed.

Final Steps

  • Stir in the chopped green onions and remove from heat. Garnish with fresh cilantro if desired before serving.

Notes

Use day-old rice for best results. Don’t overcrowd the skillet to allow even cooking. Adjust spice levels by modifying the sriracha and consider adding various proteins or vegetables based on your preference.
