  • 4 pieces ripe bananas, sliced Choose ripe bananas for maximum sweetness.
  • 1 cup brown sugar
  • ½ cup unsalted butter Melted.

  • 2 teaspoons vanilla extract
  • 1 tablespoon rum extract Optional, could substitute with a splash of molasses.

For the biscuit topping

  • 1 cup all-purpose flour Can substitute with whole wheat flour for a healthier option.
  • ½ cup granulated sugar Can replace with coconut sugar or honey.
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • ½ cup milk Can use almond or oat milk for a non-dairy option.
  • 1 piece egg
  • 1 teaspoon lemon juice

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large skillet, melt the butter over medium heat.
  • Add the brown sugar, cinnamon, and vanilla extract, stirring until the mixture is smooth and bubbly.
  • Gently fold in the sliced bananas, and continue to cook for about 2-3 minutes.
  • Remove the skillet from heat and set it aside.

Biscuit Mixture

  • In a mixing bowl, combine the flour, granulated sugar, baking powder, and salt.
  • In another bowl, whisk together the milk, egg, and lemon juice until well blended.
  • Gradually add the wet ingredients to the dry ingredients, stirring just until combined.

Assembly and Baking

  • Pour the banana mixture into a greased baking dish.
  • Pour the biscuit batter evenly over the top.
  • Bake for about 30-35 minutes, or until the top turns golden brown.
  • Allow to cool for a few minutes before serving.
