Ingredients
  

  • 2 cups mashed very ripe banana about 4 large
  • 1/2 cup cane sugar or brown sugar
  • 1/2 cup melted butter or vegetable oil plus more for greasing the pan
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour spooned and leveled
  • 1 teaspoon baking soda
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/2 cup chopped walnuts plus 2 tablespoons for topping

Instructions
 

  • Preheat your oven to 350°F (175°C) and grease your loaf pan.
  • In a large mixing bowl, combine mashed bananas, sugar, melted butter, eggs, and vanilla extract. Whisk until smooth.
  • In another bowl, whisk together flour, baking soda, sea salt, cinnamon, and nutmeg.
  • Gently fold the dry ingredients into the wet ingredients, being careful not to overmix. Fold in the chopped walnuts.
  • Pour the batter into the prepared loaf pan and sprinkle the remaining walnuts on top.
  • Bake for 50 to 60 minutes, checking for doneness with a toothpick inserted into the center.
  • Let the loaf cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely before slicing.
