sweet potatoes
peeled and cut into 1/2-inch thick sticks

cornstarch

freshly ground black pepper

paprika

garlic powder

olive oil
non-stick cooking spray
optional garnish
minced parsley
optional dipping sauce
such as ketchup or fry sauce
Instructions
Preheat your oven to 400°F (200°C) and prepare two baking sheets with non-stick cooking spray.
In a small bowl, whisk together the cornstarch, salt, pepper, paprika, and garlic powder.
In a large bowl, toss the sweet potato sticks with olive oil until evenly coated.
Sprinkle the cornstarch mixture over the sweet potatoes and toss again to coat evenly.
Spread the sweet potatoes out in a single layer on the prepared baking sheets.
Bake for 15 minutes, then carefully flip the fries over and swap the positions of the baking sheets.
Return to the oven and bake for an additional 10 minutes, or until crispy and golden.
Remove from the oven, garnish with minced parsley if desired, and serve warm with your favorite dipping sauce.
