Ingredients
  

  • 4 lbs purple sweet potatoes
  • 1 Tbsp. extra-virgin olive oil
  • sea salt to taste
  • pepper to taste
  • butter optional
  • chives optional for garnish

Instructions
 

  • Preheat your oven to 400°F (220°C) and line a baking tray with foil.
  • Wash and scrub the purple sweet potatoes, then pat them dry.
  • Prick each sweet potato several times with a fork to allow steam to escape.
  • Rub each potato with extra-virgin olive oil for flavor and texture.
  • Place the sweet potatoes on the prepared baking tray and bake for 40 to 50 minutes, or until fork-tender.
  • Remove from the oven and let cool slightly. Season with sea salt, pepper, and optional butter and chives before serving.
