extra-virgin olive oil
sea salt
to taste

Instructions
Preheat your oven to 400°F (220°C) and line a baking tray with foil.
Wash and scrub the purple sweet potatoes, then pat them dry.
Prick each sweet potato several times with a fork to allow steam to escape.
Rub each potato with extra-virgin olive oil for flavor and texture.
Place the sweet potatoes on the prepared baking tray and bake for 40 to 50 minutes, or until fork-tender.
Remove from the oven and let cool slightly. Season with sea salt, pepper, and optional butter and chives before serving.
