  • 2 tablespoons olive oil
  • 1 lemon juiced Freshly squeezed for best flavor

  • 1 teaspoon onion powder
  • ½ teaspoon paprika

Preparation

  • Preheat your oven to 400°F (200°C) and line a baking dish with parchment paper.
  • Rinse the orange roughy fillets under cold water and pat them dry with paper towels.
  • In a small bowl, mix together the olive oil, lemon juice, parsley, garlic powder, onion powder, paprika, salt, and black pepper to create a marinade.
  • Place the fillets in the prepared baking dish and pour the marinade over them, ensuring each piece is generously coated.
  • If using, arrange lemon slices on top of the fillets for added flavor.

Cooking

  • Bake in the preheated oven for about 15-20 minutes or until the fish flakes easily with a fork and is opaque.
  • Remove from the oven and let it rest for a few minutes before serving.
