Delicious and nutritious Baked Oatmeal Bars made with rolled oats and ripe bananas, perfect for breakfast, snacks, or dessert.

Ingredients
  

Main Ingredients

  • 2 cups rolled oats
  • 1 1/3 cups mashed banana (approximately 3 ripe bananas) Choose ripe bananas for maximum sweetness.
  • 6 tablespoons water Adjust based on your consistency preference.
  • 1/2 teaspoon salt
  • 3 tablespoons pure maple syrup, agave syrup, or honey Or stevia equivalent.
  • 3 tablespoons oil (or nut butter) Nut butter can be used as an alternative.
  • 1 teaspoon pure vanilla extract

Optional Add-Ins

  • 1 handful chocolate chips or chopped nuts For an extra touch of flavor.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • Line an 8-inch square baking pan with parchment paper or grease it well.
  • In a large mixing bowl, combine the mashed bananas, water, maple syrup, oil, and vanilla extract. Stir until smooth.
  • Add the rolled oats and salt to the wet mixture and stir until just combined. If adding chocolate chips or nuts, fold them in now.
  • Pour the mixture into the prepared pan and spread it evenly. Sprinkle any remaining chocolate chips or nuts on top.

Baking

  • Bake for about 20 minutes. Do not open the oven door during baking.
  • After 20 minutes, turn off the oven and leave the bars inside for an additional 5 minutes.

Cooling and Serving

  • Remove the pan from the oven and allow it to cool on a wire rack before slicing.
  • Slice into squares or rectangles for serving.

Notes

These bars can be stored in an airtight container in the refrigerator for 3-4 days, or frozen for several months. Let them cool completely before slicing.
