  • 4 large russet potatoes Wash thoroughly before cutting.
  • 1/4 cup olive oil Can substitute with another cooking oil.
  • 4 cloves garlic, minced Adjust amount to taste.
  • 1 cup grated Parmesan cheese Use freshly grated for better taste.

Seasoning Ingredients

  • 2 teaspoons dried oregano
  • 2 teaspoons paprika
  • to taste Salt
  • to taste Freshly ground black pepper

For Garnish

  • to taste Chopped fresh parsley Optional, for garnish.

Instructions
 

Preparation

  • Preheat your oven to 425°F (220°C) and prepare a baking sheet lined with parchment paper or a silicone baking mat.
  • Wash the russet potatoes thoroughly under cold water and cut each potato into wedges, about 1/2 inch thick.
  • In a large bowl, whisk together the olive oil, minced garlic, oregano, paprika, salt, and pepper.
  • Toss the potato wedges in the seasoning mixture until evenly coated.
  • Spread the seasoned potato wedges in a single layer on the prepared baking sheet.

Baking

  • Bake for 25-30 minutes, flipping them halfway through until golden brown and crispy.
  • Remove the wedges from the oven and sprinkle the grated Parmesan cheese over them while still hot.
  • Return to the oven for an additional 5 minutes to melt the cheese.

Serving

  • Garnish with fresh parsley if desired and serve hot.

Notes

To achieve the best texture, soak the potato wedges in cold water for at least 30 minutes before cooking. You can also substitute different cheeses or add crushed red pepper flakes for extra flavor.
