  • 2 slices whole-grain bread
  • 1 whole ripe avocado
  • 1 cup fresh mozzarella cheese, sliced high-quality mozzarella recommended
  • 1 medium tomato, sliced
  • 1 tablespoon olive oil or unsalted butter for frying
  • to taste Salt
  • to taste Pepper
  • to taste Fresh basil leaves (optional) for added flavor

Instructions
 

Preparation

  • Begin by heating a skillet or frying pan over medium heat.
  • While the pan heats, slice the avocado in half, remove the pit, and scoop the flesh into a bowl.
  • Mash the avocado with a fork and season with salt and pepper to taste.
  • Spread the mashed avocado evenly onto one side of each slice of bread.
  • On top of the mashed avocado, layer the mozzarella slices and then the tomato slices. If you like, add fresh basil leaves for an extra flavor boost.
  • Place the second slice of bread on top, avocado side down, to create a sandwich.
  • Drizzle olive oil or spread butter on the outer sides of the bread.

Cooking

  • Place the sandwich in the heated skillet. Cook for 3-4 minutes on one side until golden brown and crispy.
  • Carefully flip the sandwich and cook for another 3-4 minutes on the other side, ensuring the cheese melts.
  • Once both sides are golden and the mozzarella is oozing, remove the sandwich from the pan.
  • Let it cool for a minute, then slice in half and enjoy!

Notes
