Ingredients
  

Main Ingredients

  • 2 cups Fresh Okra, washed and sliced Use fresh, bright green, and firm okra pods.
  • 1/2 cup Palm Oil For authentic flavor.
  • 1 medium Onion, finely chopped
  • 2 cloves Garlic, minced
  • 1 pound Chicken or Beef, cut into bite-sized pieces Mix of meats can enhance flavor.
  • 2 cubes Seasoning Cubes
  • to taste Salt
  • to taste Pepper Fresh chili can be added for some heat.
  • as needed Water Adjust based on cooking needs.

Instructions
 

Preparation

  • Wash the fresh okra under cold water and slice them into small, uniform pieces.

Sauté Aromatics

  • Heat palm oil over medium heat in a medium-sized pot.
  • Add chopped onions and minced garlic; sauté until fragrant and onions are translucent (about 3-4 minutes).

Cook the Meat

  • Add the cut pieces of chicken or beef and stir continuously to coat with oil, onions, and garlic.
  • Sauté for an additional 5-7 minutes until the meat begins to brown.

Add Water

  • Pour sufficient water to cover the meat, increase heat to bring it to a boil.
  • Once boiling, reduce heat to a simmer and let cook for about 15 minutes or until tender.

Incorporate Okra and Seasonings

  • Gently add in the sliced okra, seasoning cubes, salt, and pepper.
  • Stir well to combine all ingredients.

Simmer

  • Allow the soup to simmer on low heat for an additional 10-15 minutes until the okra is fully cooked and soft.

Serve

  • Remove from heat and serve while warm with rice, fufu, or pounded yam.

Notes

For a thicker soup, blend a portion of the okra before adding it. Avoid overcooking to maintain okra's vibrant color.
