  • 2 pounds Chicken pieces (thighs and drumsticks) Bone-in preferred for flavor.
  • 2-3 pieces Hot peppers, chopped Adjust based on spice preference.
  • 1 cup Chicken stock
  • 4 cloves Garlic, minced
  • 1 can Coconut milk (about 14 ounces)
  • 2 tablespoons Curry powder Jamaican curry powder is recommended.
  • to taste Salt
  • to taste Pepper
  • 3 tablespoons Vegetable oil
  • 1 large Onion, chopped
  • 1 inch Ginger, grated

Instructions
 

Preparation

  • Heat the vegetable oil in a large pot over medium heat.
  • Add the chopped onion and minced garlic, stirring until the onion turns translucent (about 3-5 minutes).
  • Stir in the curry powder, salt, and pepper. Cook for another minute.
  • Add the chicken pieces, browning them on all sides (about 5-8 minutes).
  • Pour in the chicken stock and coconut milk, followed by the chopped hot peppers and grated ginger.
  • Bring to a gentle simmer, then cover and cook for 30-40 minutes, stirring occasionally.

Serving

  • Serve the curry with steamed rice or Jamaican rice and peas.
  • Consider garnishing with fresh herbs like cilantro or parsley.
  • Pair with refreshing cucumber salad or fried plantains for added flavor.

Notes

Bone-in thighs or drumsticks give the best flavor. You can adjust the spice by changing the amount of hot peppers used. For extra flavor, marinate the chicken with spices before cooking.
